500g chicken (cut into pieces)

2 onions, finely sliced

2 tomatoes, chopped

4β5 Highland Spices green cardamom pods

1 cinnamon stick and 3 cloves

1 tbsp ginger-garlic paste

1 tsp red chili powder

Β½ tsp turmeric

1 cup coconut milk (optional for a Kerala-style twist)

3 tbsp oil or ghee

Salt to taste

Heat oil in a pan, add Highland Spices cardamom pods, cinnamon, and cloves.

Add onions and sautΓ© until golden brown.

Stir in ginger-garlic paste and tomatoes; cook till soft.

Add chicken pieces, chili powder, turmeric, and salt. Mix well.

Pour in coconut milk or a little water, cover, and simmer until chicken is tender.

Garnish with coriander and serve hot with rice or chapati.
