Ingredients
πΏ Vegetables (use any mix you like)

1 cup cauliflower florets

1 cup diced carrots

1 cup diced potatoes (or baby potatoes halved)

1 cup bell peppers (mixed colors), chopped

1 cup zucchini or beans, chopped

1 large onion, thickly sliced

8β10 garlic cloves (unpeeled or lightly crushed)

1β2 tbsp fresh coriander leaves (for garnish)
πΆοΈ Masala Marinade

2 tbsp thick curd (yogurt)
-
2 tbsp olive oil (or any vegetable oil)
-
1 tsp red chilli powder (adjust to taste)
-
1 tsp coriander powder
-
Β½ tsp turmeric powder
-
1 tsp garam masala or tandoori masala
-
1 tsp cumin powder
-
1 tsp crushed black pepper
-
Β½ tsp dried fenugreek leaves (kasuri methi, optional)

Juice of Β½ lemon
-
Salt to taste
Instructions

Preheat Oven / Air Fryer

Preheat your oven to 200Β°C (400Β°F) or set your air fryer to 190Β°C.

Prepare the Vegetables

Wash and cut the vegetables into similar-sized pieces so they cook evenly.

Pat dry to remove excess moisture.

Make the Masala Marinade

In a large bowl, whisk together curd, oil, and all the spice powders.

Add lemon juice and salt. Mix until smooth.

Coat the Vegetables
-
Add all chopped vegetables and garlic into the bowl.

Toss well so each piece is evenly coated with the masala marinade.

Let it rest for 15β20 minutes for the flavors to soak in.

Roast / Air Fry

Oven method: Spread the vegetables on a baking tray lined with parchment paper. Roast for 25β30 minutes, stirring halfway through.

Air fryer method: Air fry for 18β22 minutes, shaking the basket halfway.

Finish & Garnish
-
Once vegetables are crisp and golden, remove from heat.

Sprinkle with fresh coriander leaves and a squeeze of lemon juice.

Serving Suggestions

Serve hot with mint chutney or curd dip.

Pairs beautifully with jeera rice, roti, or as a filling in wraps.

Can also be served as a warm salad with a drizzle of yogurt dressing.

Add paneer cubes or tofu for extra protein.

For a smoky tandoori flavor, add a pinch of smoked paprika or charcoal-infused oil.
